Porcini Mushroom Sauce
serves 4
Ingredients
- 3 T butter
- 1 ea sweet onion, minced
- 2 oz dried porcini mushrooms
- 6 T heavy cream
- 3 T fresh parsley, minced
Instructions
- Rehydrate the mushrooms in 2 C hot water, then strain and coarse chop. Reserve the liquid.
- Saute the onion in butter until edges begin to brown. Add the mushrooms, seaon to taste, and saute 1 to 2 minutes.
- Add the reserved liquid and reduce by half, then stir in the cream and simmer until sauce begins to thicken.
- Stir in the parsley, adjust seasoning, and serve.
