Porcini Mushroom Sauce

  1. Rehydrate the mushrooms in 2 C hot water, then strain and coarse chop. Reserve the liquid.
  2. Saute the onion in butter until edges begin to brown. Add the mushrooms, seaon to taste, and saute 1 to 2 minutes.
  3. Add the reserved liquid and reduce by half, then stir in the cream and simmer until sauce begins to thicken.
  4. Stir in the parsley, adjust seasoning, and serve.
